Just a quick update today, more detailed on Sunday!
Today is our off day from class, so I spent the day at home doing homework and getting organized for the semester now that I know what all my classes are like. I am now officially taking Criminology and Criminal Justice in Scandinavia instead of Neuroscience of Fear, and I am much happier about that. The professor is so sweet and it seems really interesting. Plus, we get to visit two Scandinavian prisons! Anyway, I studied and did homework, and then Susanne and I started cooking dinner because Niklas and the neighbors, Mette and Sarah were coming. We made (well, tried to make) French Lasagna, but didn't have enough of some ingredients and forgot some others, hahaha. Somehow, though, it turned out really good! Susanne seems to be able to throw anything into a pot or a dish and make it work:) ps. Aunt Maryanne, if you're reading this, the recipe was from the cookbook you gave me! We have been picking out lots of recipes from it:) Basically, it was lasagna noodles with cheese, cheese, and more cheese, and a few veggies haha, but still sooo good. I also made a tomato, cucumber, onion, and feta salad. After dinner, Sebastian and I played the piano for everyone and then we watched the Handball game.. of course Denmark won:)
Tomorrow, I have class until 2:30 and then I am going to explore the city with Thierry (my.. "host cousin"..? haha) and some friends. I haven't really seen any big tourist attractions yet, so I can't wait. Also, one of my favorite bands, Dispatch, just started their European tour and will be in Copenhagen on Monday!!!! Bought my tickets super cheap and am going with some friends from school andddd I even got Susanne and Michael on the Dispatch bandwagon! They bought tickets and will be going too.. YAY:) But this weekend I am going out with a group of friends from school in Helsingor (where Kronborg/Hamlet castle is) and Michael's older son, Andreas, is going to show us the nightlife there:) Saturday I'm planning to go out in Copenhagen with everyone again and hopefully go into Christiania (like hippie-town, Copenhagen) to check it out. Anyway, I will update again Sunday with (hopefully) lots of pictures and stories to tell!
Everything sounds wonderful Elizabeth! Have fun this weekend and be careful. I'm so glad you are enjoying the cookbook. I'm sure you will always remember the first time you tried those recipes, for being in such a special place during such a magical time. I'm really happy for you.
